The best protein pancake recipe

If you follow me on IG or Facebook, you probably know by now, that I LOVE my protein pancake for breakfast! 🙂

I have been asked for the recipe so many times, so I thought I’d share it with you here.

The secret ingredient that actually makes this pancake so fluffy, and super tasty, is the Vanilla Pea Protein from Nutristrength. I have tried to make pancakes with other type of protein, but none of them came even close to this. They usually become very dry and have spongy texture…

So here is the recipe:


  • 1 whole egg
  • 2 egg whites
  • 40g-50g ground oats (I use gluten free)
  • 20g Nutristrength Pea Protein
  • Tiny bit of salt
  • Truvia (stevia to sweeten)
  • Coconut oil for baking

Topping options:

  • Any fruit of your choice (berries are my favourite)
  • Nut butter of your choice
  • Coconut or greek yoghurt (on the photo I used Coyo salted caramel yoghurt, heaven!!)


Whisk the eggs first, add a pinch of salt (it brings out the sweet flavours more). Add dry ingredients (ground oats and pea protein) Mix well with a fork until it becomes smooth and with no lumps. It will become quite thick so you will need to add some water until you get the right consistency. You can also use a blender to mix everything, I just like to do it the old-fashioned way. 🙂

This recipe makes 2 pancakes. Bake them on some coconut oil on low-medium heat.  Add toppings of your choice and enjoy!
