I just spent 4 amazing days in Italy with my hubby. We were hiking, soaking up some sunshine whilst enjoying vino and some good Italian food, and completely switched off from work and our busy London life. I have still got holiday blues so I made myself an Italian inspired lunch today reminiscing the good times. Ahhh take me back!! 😀
This recipe is vegetarian (I do eat meat I just didn’t fancy it today) and low in carbs and calories. Instead of regular pasta, I used spaghetti made from black beans. It tastes just like normal pasta but it contains about 70% less carbs and it is high in protein and fibre, hence you don’t need to add meat to this dish. Thanks to the high fibre content it will keep you full for longer.
Calories and macros:
70g Low fat mozarella
Extra virgin olive oil
Black bean spaghetti bolognese recipe:
60g (dry weight) Black bean spaghetti

5 grilled asparagus spears
